strawberry-banana pancake

did you know that i LOVE pancakes?!
i think this is my favorite! i got some strawberries at the farmer's market down the street and i always have some bananas lying around at home.

strawberry banana pancakes

1 1/2 cup of all-purpose flour
1 1/3 cups milk
1 1/2 tbsp sugar
1/2 tsp vanilla extract
1 egg
1 ripe banana (mashed)
1 1/2 cups strawberries (sliced)

1. mix the flour, milk, sugar, vanilla extract, egg, and banana in a large bowl until fairly smooth.
2. fold in the strawberries
3. on a lightly greased griddle, pour in about 1/4 cup of the batch
4. cook on medium heat until you can see bubbles forming on the edges of the pancake. then flip and cook until golden.
5. repeat until you finish the batch
6. enjoy with plenty of extra strawberries and maple syrup!!
