orange chicken

i just got a macbook pro and have been playing around with it for the last couple of weeks.
i gotta say, i LOVE my MB!! it's such an amazing piece of aluminum! it's pretty much the biggest purchase i've ever spent in my whole life, but the BEST!

anyways, mostly what i've been doing revolved around fashion and food blogs.
i've got quite a list of blogs i comb over everyday. and because of that, i've got an even bigger list of recipes bookmarked. since there's no better day to start than today, i decided to make orange chicken for dinner.

it came out a little more like sweet and sour chicken with a hint of orange but it was still very delicious.
both my parents gobbled it up when they came home from mass.

soo good! especially with pepper flakes sprinkled on top!

orange chicken:
adapted from here.

2 lbs boneless skinless chicken breasts (cut into 1-1/2” cubes)
1 ½ cups all purpose flour
1 egg (beaten)
¼ teaspoon salt
¼ teaspoon pepper
Oil (for frying)

Orange Sauce-
1 ½ cups water
2 tablespoons orange juice
¼ cup lemon juice
1/3 cup rice vinegar
2 ½ tablespoons soy sauce
1 tablespoon orange zest (grated)
1 cup packed brown sugar
½ teaspoon ginger root (minced)
½ teaspoon garlic (minced)
2 tablespoons green onion (chopped)
¼ teaspoon red pepper flakes
3 tablespoons cornstarch

1/4 cup water

first combine the flour, salt and pepper into a bowl. fry the chicken cubes by first dipping them into the egg and then into the flour mixture. make sure the chicken cooks all the way through! i think it was about 2-3 minutes on each side.

oh so good and brown!

while you're waiting for the chicken to finish, in a large saucepan, add 1 1/2 cups of water, orange juice, lemon juice, rice vinegar and soy sauce. stir the ingredients together at medium heat and let it simmer. then add in orange zest, brown sugar, ginger, garlic and green onions. let that boil for a couple of minutes.
then in a small bowl combine 1/4 cup of water to the cornstarch. and slowly add to the saucepan. this should make the sauce thicken. pour the mixture over the chicken and you're done!
i added extra green onions on top and sprinkled two pinches of red pepper flakes.

i ended up with alot of extra sauce, but i also didn't have 2 whole pounds of chicken breast. even so, it came out soo good!!
eat it with a bowl of white(or brown) rice and you can't go wrong.
